Maple Ginger Chicken
3 tablespoons OhioMaple syrup 1 teaspoon finely chopped orange peel 1 tablespoon orange juice 2 tablespoons Dijon mustard 1/4 teaspoon ground pepper 1/8 teaspoon ground ginger 2 whole chicken breast, skinned and halved lengthwise
In a small mixing bowl, stir together all ingredients except chicken. Place chicken on baking dish. Spoon a little maple mixture on top of chicken. Broil 4 to 6 inches from flame for 8 - 10 minutes. Brush frequently with maple mixture. Flip and bake 4 - 6 minutes or until done. Server with OhioMaple Dijon sauce. Serves 4. Maple Dijon sauce Mix 1/2 cup OhioMaple Syrup with 1/2 cup Dijon mustard. Cook in microwave for 1 - 2 minutes. Serve with chicken. This sauce also makes a great salad dressing!
